With three boys in the family, all unique adults now, surely one has to be the favourite? Parents should never say who their favourite child is, and it’s probably for the best that ours never have. After all, it would be one less thing for us to argue about.
This Chablis-style Eden Valley Chardonnay is pale gold with slight green hues. It has lifted notes of melon, peach and hints of lemon. This is a well-rounded wine with notes of stone fruits on the palate, accompanied by bright citrus fruits with an alluring textural component. Finishing with mouth-watering acidity and vibrancy.
Harvested at the cool of night, the fruit was pressed directly off skins and cold-settled for three days. The juice was then racked and allowed to start fermenting naturally. Towards the end of the fermentation process, the wine was put into seasoned French oak where it finished fermenting and partially underwent secondary fermentation. Lees stirred twice weekly for six weeks then racked, filtered and bottled.
This Single Vineyard Chardonnay comes from the collective wine company vineyard in Pewsy Vale, Eden Valley. With 20 years vine age and 500 metres above sea level, this site has its own unique sub-climate with higher rainfall and cooler climate than the majority of Eden Valley.
