This Single Vineyard old vine Shiraz is sourced from the Lyndoch Ranges, located in the south-west of the Barossa Valley. This wine pays homage to the intensely concentrated, deep and rich Shiraz which the Barossa Valley is renowned for producing.
Deep crimson in colour, with complex aromas of blackberries, raw cocoa and plums. The palate shows great intensity and structure with ample fruit and texture, finishing with velvety tannins and great length.
Fermented with 20% whole bunches, with the balance being destemmed, not crushed, leaving the berries whole. The juice was then hand plunged twice daily for three weeks before being pressed to 50% new French oak and 50% seasoned French oak Hogs Heads, aged on lees for 18 months, and racked only once during this time.
No fining or filtration was used on this wine.
