This bright, perfumed Syrah has lifted violets, forest fruit and blueberries. The palate is elegant with the same forest fruits, red berries and spice. A unique wine with soft velvety tannins driven by lingering acidity.
This Syrah was picked at optimum ripeness at around 13.5 Baume with 10-20% whole bunches remaining in the fermentation. The fruit was held at 10-15 degrees for two days before being allowed to warm and start fermentation naturally. After 12 days on skins and gently hand plunged daily, the wines were pressed to 90% seasoned 10% New French oak 500L puncheons where they matured for 12 months.
No fining or filtration was used on this wine.
This Syrah comes from our Pendee Farm vineyard just outside of Springton in the Eden Valley. Farmed sustainably with organic principles with an elevation of 410 meters and its own sub climate, this vineyard continues to produced unique elegant wines.
